A Puglian Tradition

Taralli have been part of southern Italian food culture for centuries, particularly in Puglia. Their origins are often traced back as far as the 1400s, when simple pantry ingredients such as flour, olive oil, white wine and salt could be transformed into a crisp snack that kept well and required very little.

Over the centuries, countless regional variations have developed, but the essential appeal has remained the same: simple ingredients, careful preparation and an irresistible crunch.

Shaped by Hand

The dough is rolled into long strands before each tarallo is cut and shaped individually by hand.

Once formed, the taralli are boiled before being baked until crisp and golden, a traditional technique that gives them their characteristic crunch.

A Family Bakery in Puglia

In Cerignola, in the heart of Puglia, Gerardo Cellamaro and his family make our taralli in their neighbourhood bakery.

Established in 2002, the bakery produces bread, focaccia, biscuits and taralli using the kind of hands-on methods that remain central to traditional Puglian baking.

Our taralli are made daily in small batches from high-quality ingredients sourced from local producers. Rather than being shaped by machine, each one is formed individually by hand before being boiled and baked.

It is this simple process, together with the care taken at every stage, that gives them their distinctive crisp texture and rustic, irregular shape.
