Sbrinz AOP Alpage
Firm, crumbly, and intensely savoury, Sbrinz AOP Alpage is the kind of cheese that speaks of mountain pastures and time-honoured tradition. Crafted exclusively in the Swiss Alps during the summer months, this raw cow’s milk cheese is made in high-altitude chalets (‘alpages’) where cows graze on wild alpine herbs, imparting a richness and complexity you won’t find anywhere else.
Origin: Switzerland
Pairing: At Bayley & Sage, we love Sbrinz as a moment of quiet luxury on a cheeseboard: shaved into curls with a paring knife, or snapped and shared with a glass of aged white Burgundy or a crisp Alpine-style lager.

Wild Mushrooms
Fragrant, fleeting, and full of character, our wild mushrooms are one of the season’s most treasured ingredients. Sourced from forests across Europe—where mist clings to moss and the forest floor hums with quiet abundance—these foraged varieties bring a depth of flavour and texture that cultivated mushrooms simply can’t match.
Pairing: At Bayley & Sage, we love to pair wild mushrooms with our fresh egg tagliatelle, cultured butter, and a touch of Isle of Wight garlic and English thyme. Or enjoy them in a savoury tart with Cropwell Bishop Stilton for rich, comforting flavour.

Apples
The humble apple is a true taste of the British orchard—crisp-skinned, juicy, and packed with sun-ripened sweetness balanced by a refreshing hint of tartness. At Bayley & Sage, we choose varieties that celebrate the seasons, from early eating fruits with floral notes to late-season keepers with rich, honeyed depths.
Pairing: Crisp apples and creamy Gorgonzola make a bold, balanced pairing—sweet, savoury, and effortlessly elegant. Perfect on a cheeseboard or with bitter leaves and honey.

Dahlias
Sumptuous, sculptural, and steeped in seasonal splendour, dahlias are the jewels of the late summer garden. Each bloom is a celebration of form and colour—layered petals unfolding in intricate symmetry, from tightly curled pompon to bold dinner-plate heads that command attention.

Eucalyptus
A staple of our floral selection, eucalyptus brings a quiet sophistication to any arrangement. With its dusky sage-green leaves and cool, clean aroma, this versatile stem is as beautiful on its own as it is woven among wild blooms or classic roses.
