The Visit That Started It All
In 2024, our founder Jennie travelled to South Africa and discovered something truly special nestled at the foot of the Simonsberg Mountains – the beautiful Babylonstoren farm. With its historic whitewashed walls, lush gardens, and quietly elegant atmosphere, the farm immediately cast its spell.
Dating back to 1692, Babylonstoren is one of the oldest working Cape Dutch farms in the Winelands region. What Jennie found most moving wasn’t just the breathtaking setting, but the farm’s philosophy, one of simplicity, sustainability, and a deep respect for nature. These are values that resonate deeply with us at Bayley & Sage, and it was clear from the start that this was a producer we had to share.

Rooted In Tradition, Grown With Care
Babylonstoren is a farm that honours its past while embracing the future. Its gardens are inspired by the original Company’s Garden in Cape Town, laid out with thoughtful geometry and bursting with over 300 varieties of edible plants. Everything is grown organically and harvested by hand, from fragrant herbs and heirloom vegetables to grapes, olives, and citrus fruit.
The result is more than just produce. It’s a celebration of seasonality, terroir, and craftsmanship. Every element of the farm, from the architecture to the wine barrels, reflects a quiet commitment to quality and care.


Our Handpicked Favourites
While we can’t bring the entire farm to London, we’re proud to offer a small selection of Babylonstoren’s treasures.
Chardonnay
A standout in the cellar, this Chardonnay is bright yet creamy, with layers of citrus and stone fruit, and a beautifully refined finish. It’s made with the same philosophy that runs through the rest of the estate: intention, patience, and a deep connection to the land.
Cabernet Sauvignon
This complex, full-bodied red is a stellar wine fit for any celebration. Beautifully balanced flavours are complemented by a long, satisfying finish, making it a favourite for slow sipping. It pairs beautifully with red meats and adds depth to any dinner table.
Kalamata Olives
Grown in the estate’s olive groves and harvested at the peak of ripeness, these olives are plump, juicy, and full of flavour. Their gentle bitterness and rich fruitiness make them perfect for sharing, whether you’re planning a summer picnic, a weekend spread, or a relaxed glass of wine with friends.
Extra Virgin Olive Oil
This golden oil is a blend of five Italian olive varieties, all grown in the sun-drenched soil of the Simonsberg slopes. Silky on the tongue and in the throat, it’s rich with fruity, herbaceous, and peppery notes alongside subtle florals. Pure golden goodness. Drizzle over fresh burrata and tomatoes, and enjoy under the sun.
