What we’ve captured for this evening is a snapshot of the rich and varied scene of English wine and cheese making, with roots firmly planted in tradition, but not afraid to evolve, adapt, express, and explore. All whilst grounded in an underlying commitment to quality, excellence, and great flavour.

White Lake Cheese

Third-generation farmers and cheese makers, cheese making runs through the blood at Somerset-based White Lake Cheese. With their roots in Cheddar making, they have adapted and evolved to the niche field of goat’s cheese, where they set the bar high. The cheese is produced in small batches, with an innovative style. Their most celebrated cheese, Rachel, has long since been a mainstay and customer favorite at Bayley & Sage.

Our buyers have always loved the quality, style, and uniqueness of what has become a reference point in English cheese making.

Trethowan Brothers

For over 25 years, the Trethowan brothers have been making and selling handmade, raw cow’s milk cheese. The family originated in Wales where they rose to prominence as the finest Caerphilly makers in the land. In 2014 the Trethowan brothers relocated to Somerset, a stone’s throw from the historic town of Cheddar. From 2017 they turned their know-how to making traditional cheddar. In that short time, they established what has fast become one of the finest and most recognised cheddars in England: Pitchfork Cheddar.

Our buyers at B&S have always loved the character of the two brothers, their approach, and their commitment to going about everything they do in the right spirit. And we adore their cheddar and are always proud to have it in our range.

Sharpham

Produced by the river Dart, in the South of Devon, Sharpham is a small artisan dairy, using milk from their herd of cows, and local goats and sheep’s milk from neighbouring farms. Brie-making began here in the 1970s – at this time this was a unique proposition, and preceded the blooming of English cheesemaking that was to follow. Sharpham now makes an array of cheese, and even though their origin was in making English Brie, there is something quintessentially English about their cheeses.

This taste, finish, and style, which feel unmistakably English, have meant that our buyers have always maintained a soft spot for something that started as Brie and become so much more.

Wiston Estate

With vines on the Historic West Sussex Estate, Wiston Estate produces world-class sparkling wine that is a modern-day classic and standard bearer for English wine. Our buyers have turned to Wiston as the mainstay in our sparkling wine range, unfailing well-made, elegant, and fresh, with good minerality and plenty of style. These wines are a match for the finest sparkling wines the world over.

London Cru

London Cru is a trailblazer in the English wine scene, uniquely positioned as an urban winery and based close to our hearts in a postcode we share – SW6. They have the added dimension of not only being an urban winery, but also using their fruit from vines in West Sussex. These wines show an interpretation of the terroir and grapes varieties in England, with no sense of imitation, these are well-crafted, distinctly English wines, with real quality.

Our buyer loves these wines as they demonstrate the richness and dynamic enterprise that captures English wine and wine making.  It’s no wonder that London Cru wines are appearing on the list of exclusive restaurants and capturing prizes and growing accolade.
