They pick the fruit during the cool hours of the night, and then the whole berries are pressed and transferred to a combination of stainless-steel tanks and large wooden casks. This allows for extra texture and aromatic complexity.

TASTING NOTES
It’s light in body, with a high acidity. The wine features bright flavours – green apple, elderflower, grapefruit, citrus, orange blossom, fresh herbs (rosemary and oregano), green bell pepper, asparagus and grass. It has a delicacy to it, with a beautiful mineral aftertaste. It’s quite complex in fruits, flowers and veg. There is a nice persistency on the palate and it’s very clean, I could feel all of the flavours one after the other.
PAIRING SUGGESTIONS
Apéritif
- Cheese platter: Perroche (or any soft cheese), Rachel goat’s cheese, raclette, Sharpham ticklemore and a young pecorino
- Blinis with soft cheese and fish roe
- Toasted sourdough with smoked trout pate
- Mix of peeled nuts, olives and grissini
Pasta Dishes
- Spaghetti alla chitarra with garlic and chilli olive oil dressing, finished with grated bottarga
- Crab and prawn tortellini with a butter and sage sauce
- Risotto with prawns and British green asparagus
