Herefordshire Frier
Founded in 2020, when Katie Cordle first experimented with cheesemaking, Long Lane Dairy is one of the smallest dairies in England. Working exclusively with sheep's milk, they are the only producers of Herefordshire Frier. A halloumi-style cheese. the Frier is one of Long Lane's signatures. Chewy and salty. when grilled it develops a wonderful crust.

Red Cherries

Maldera Burrata
In the Altopiano delie Murge, cows graze in fresh pasture, the almost subtropical region develops a distinctive fodder for the cattle. The milk then is converted into curds , stretched into mozzarella shell and filled with more curds and cream , the cow's milk gives a more present cream taste to the final product, with intense indulgent flavour.

Pairing: We recommend this with chilled glass of Bayley & Sage Côtes de Provence Rosé.

Ladybu Buffalo Burrata
Buffalo milk is rather rare, most of it goes for the production of Mozzarella, but some small producers will make Burrata and other cheeses with the milk. This Burrata is creamier then ever, the thin casing holds the stracciatella inside, with delicate milk and buttery notes.

Pairing: Have it with a drizzle of Querubi Olive Oil and Balsamic, perfect for the summer.
